Pieday Friday Recipe – Tuna Napolitana

This tuna napolitana pasta recipe is tasty, filling  and quick to make. And it comes with the added bonus that it includes healthy tuna fish and a nice helping of veg (that the kids won’t notice!) so it’s an ideal weeknight pasta bake that can be pre-prepared, and then popped in the oven when you’re ready for it.

Serves approx 6: 500g packet of pasta (I chose penne, which is the cheapest in my local supermarket at 39p!), 1 tin of tuna chunks in spring water, 1 tin chopped tomatoes, 1 large onion (red or white), 2 fresh tomatoes, 2 tsp garlic paste, 3 tbsp tomato puree, 2 tsp mixed herbs, 2 tbsp flour, 3/4 pint milk, 50g cheese, 2 knob of butter, splash of oil.

  • Cook up a pack of pasta according to packet instructions and in the meantime, you can get on with preparing the sauce.
  • Finely chop the onions and fry in the oil until the softened. 
  • In a larger pan, melt the butter then add the flour and stir before adding the milk a bit at a time so that the sauce thickens.
  • When all the milk is combined, add the garlic paste, tomato puree and herbs and stir through before adding the tin of tuna, cooked onions and tin of chopped tomatoes.
  • Add in the cooked pasta and stir to combine before adding to an oven-proof dish and arranging sliced tomatoes on top with a sprinkling of cheddar cheese
  • Bake in the oven until tomatoes have softened, cheese is melted and looks golden brown on top

Weeknight recipe – Philly Chilli Pasta Bake

I’ve tried out one of the recipe that come on a pot of Philadelphia with garlic and herbs – their Chilli Pasta Bake. I found it very easy to make, and included a few things I’ve never tried before, such as a crispy cheesy topping and chilli with pasta. It all seemed a bit odd to put it together, but honestly it works!

Ingredients: 300g extra lean minced beef, peppers, 1 jar of ready-made chilli sauce, 300g penne pasta, 100g Philadelphia Garlic and Herbs, 1 egg, 150g greek yoghurt, 40g grated cheese

Method: Brown the mince and I chose to add fresh peppers so I cooked these until softened. Add the jar of chilli con carne sauce (I didn’t have this, so I used tomato pasta sauce with lots of added fresh chillies) and cook for 5 mins on a low heat. Meanwhile cook the penne pasta according to the packet instructions then mix with the mince & chilli sauce in an oven-proof dish. For the cheesy topping, whisk the egg with the Philly, yoghurt and half the grated cheese. Pour this mixture over the pasta bake and add the rest of the cheese on top. Bake for 20 mins in the oven at 180°C until the cheese has melted and the topping has browned. Now try not to eat it all to yourself! So yummy!

Recipe – Big Breakfast Pasta Bake

I love a good pasta bake and I rustled up this big breakfast recipe for my fry-up loving brother’s birthday dinner. This pasta bake contains lovely layers of favourite breakfast items and a lovely golden cheesy crust – made with eggs for an extra brekkie treat!

What you’ll need: Penne pasta, tin of chopped tomatoes, tomato pasta sauce, cooked sausages, cooked bacon rashers, baked beans, mixed peppers, sautéed sliced mushrooms, sliced fresh tomatoes, grated cheese, cream cheese and 2 eggs.

Boil your penne pasta according to the packet instructions and in the meantime prepare your pasta sauce – combine the mixed peppers, chopped tomatoes, baked beans and pasta sauce, then add in sliced pre-cooked sausages and bacon. Mix together with the cooked pasta and put in an oven-proof dish. Layer on the sliced mushrooms and fresh sliced tomatoes and pour over a mixture of 2 eggs whisked with 2 tbsp of cream cheese before topping with plenty of grated cheese. Pop this in the oven for 15 minutes or until the cheesy topping is cooked through and nicely golden!

Not only is this a lovely tasty recipe, but it’s also quite thrifty – none of your left-over fry-up will go to waste, just chuck it all into this pasta bake! Enjoy :)
