Pieday Friday ~ summer couscous recipe

Sometimes you just don’t want a big filling dinner during the summer and I’ve got the perfect solution for days like these – a lovely summer couscous dish packed full of lovely vegetables and flavour!

You will need: Pack of couscous, mushrooms, red onion, spring onions, peppers, olives, coriander, lemon juice, salt and pepper.

First chop and brown off the red onions in a large pan – fried in a little fry-light or olive oil if you prefer. Then add strips of peppers and sliced mushrooms and cook until softened. In the meantime, follow the packet instructions to make the couscous, adding the correct quantity of boiling water and stir in a tablespoon of lemon juice before waiting for it to be absorbed. Fork the couscous over and add to the pan of vegetables. Slice up the spring onions and olives and stir through the couscous mixture, adding chopped coriander and salt and pepper to taste. Serve with some lovely marinated chicken (see my recipe here!) for a lovely summer meal!
