Pieday Friday ~ Guinness Cake

It’s a recipe that I was only introduced to last month by one of my besties and I’ve already made this three times since then! How much cake can one person eat? If it’s Guinness cake, the answer is A LOT! I love this Nigella Lawson recipe and it’s so simple that even I can make it taste good! Yes, I’m the girl who likes to have a go at making cakes, but they always always fall flat, or are dry or are so moist that they are actually uncooked and inedible. But when I tried this recipe for the first time, it actually turned out really well. In fact I’ve never made a cake that was so well-risen, so richly moist and SO tasty. Thanks Nigella, you’ve saved me from all my cake nightmares!

So for my birthday the obvious choice was to bake another Guinness cake and I decided to share some snaps of my baking with you so that you can get an idea of what the process looks like if you wanted to bake along at home. It’s a little unusual because the cake is started in a pan on the hob, so you have a warm batter going into the oven but I think it’s this process, along with the bubbliness Guinness that makes the cake so light.

Ingredients: 250 ml Guinness, 250g butter, 75g cocoa powder, 400g caster sugar, 142 ml sour cream, 2 large eggs, 1 tablespoon vanilla extract, 275g plain flour, 2 ½ teaspoons bicarbonate of soda, 300g cream cheese, 150g icing sugar, 125ml double cream.nigellas recipe for chocolate guinness cake-2

Put the oven on at 180 degrees and line a 9 inchspringform cake tin, although I have decided to use a square tin because I can get more slices of cake out of it that way!nigellas recipe for chocolate guinness cake-3 nigellas recipe for chocolate guinness cake-4

Pour the Guinness into a saucepan on the hob and add the butter in slices and heat until melted. Whisk in the cocoa and sugar. In a bowl, mix the eggs, sour cream and vanilla before adding to the pan. Whisk in the flour and bicarbonate of soda. Pour into the cake tin and bake in the oven for around 45 minutes – 1 hour.
