When it comes to cooking, pressure cookers tops the market as one of the kitchen appliances that people invest in. After all, it helps you cook meals faster and can make certain foods (like tough meat) become tender as quickly as possible. It helps us save time and money, so what’s not to love? In my household, most of the time, we prefer an electric pressure cooker to prepare a hearty meal, especially at this time of year – who doesn’t love a good stew, eh?

CREAMY MASHED POTATOES
The best and fastest way to make mashed potatoes is through a pressure cooker. Unlike boiling the potatoes where the potatoes can end up watery or tasting bland, cooking them in a pressure cooker is faster and definitely tastes even better! To do it, just peel the potatoes and cut it into medium sized cubes. Place the cubed potatoes into the pot and add a cup of water. Cover the cooker and set the pressure to high. Set the timer for 5 minutes. Once the timer beeps, test the potatoes to check if they are already done. If they are, mash using a potato masher and then add milk (and maybe butter) as needed to make it creamy and smooth. And voila! Your very own creamy pressure cooker mashed potatoes.
For this recipe, you are going to need some thick-cut and bone-in pork chops, green peppers, onions, carrots, potatoes, tomato sauce, and mushrooms. Just put some olive oil on the pork chops and put in the pressure cooker to sizzle without sealing the lid. Add the remaining ingredients after a couple of minutes and allow to cook a little longer. Next, add the tomato sauce and water, secure the lid and allow the pressure to cook the pork and vegetables for 10-15 minutes.
BBQ BACON MEATLOAF
This recipe is great if you’re having friends round over Chistmas. Look up a good meatloaf recipe and create the mixture. Shape the meatloaf and lay some bacon slices on top and underneath. Spread some BBQ sauce over the top. If your pressure cooker came with a trivet, add this to the cooker and pour in two cups of water before placing the meatloaf on the trivet. Lock it the lid place and set the cooker to high pressure and cook for 20 minutes.
