Happy Easter everyone! Today I’m sharing a quick and easy recipe for a creamy blue cheese sauce that I tried out for the first time this week. The recipe was inspired by a visit to the local market when I came skipping home with a big bag full of purple sprouting broccoli. One of my favourite Spring dishes is purple sprouting broccoli with a cheese sauce – like a cauliflower cheese but with seasonal broccoli. After a lot of searching online, I failed to find a recipe for a blue cheese sauce so I thought that I would have a go at making up my own recipe to create the perfect creamy accompaniment to my broccoli.Ingredients: 60g blue cheese, 2 tablespoons plain flour, 2 tablespoons butter, 1/2 cup milk.
Firstly, clean the broccoli and put on to steam. Next, melt the butter in a sauce pan and quickly stir in the flour until it becomes a smooth golden paste. Pour in the milk, little by little, stirring into the butter-and-flour paste until you end up with a thick white sauce. Finally, grate the blue cheese into the sauce and take of the heat, stirring until it melts to create a creamy thick sauce. Pour over the steamed broccoli and enjoy!
