Here’s a lovely afternoon tea recipe for you which is especially good for using up your over-ripe bananas: no matter how black your banana have turned, they will be fine in this cake!
Ingredients: 125g butter, 150g caster sugar, 1 tsp vanilla extract. 1 beaten egg, 2 very ripe bananas (mashed), 190g self raising flour, 60ml milk
Method: Grease and line a loaf or brownie tin. Melt butter, sugar and vanilla in a saucepan over a medium heat in the microwave and stir together. Add the mashed bananas, then add the beaten egg and mix well. Stir in the flour and the milk. Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunch topping, then bake at 150 C fan oven (or 170 C regular, Gas mark 3) for 35 mins, until golden.
