Pieday Friday ~ Cupcakes: yes, actually cakes in a cup

Just a quick recipe today – and when I say quick, I mean 60 seconds! When you really fancy a cake in a rush, this is the easiest recipe to satisfy your craving within minutes. Just grab a cup, mix together the following ingredients and zap for 60 seconds in the microwave = warm sweet cupcakes for pudding!

Pop 1 tablespoon of butter in the cup and melt in the microwave for a few seconds. Stir in 1 tablespoon of brown sugar and 1 tablespoon of white sugar, an egg yolk, a pinch of salt, 3 and 1/2 tablespoons of self-raising flour plus any flavourings you like – I chose a few drops of vanilla essence and grated white and milk chocolate. Mix thoroughly and microwave for 60 seconds but keep an eye on it to make sure it doesn’t bubble over the top – you might have to do it in 2 sessions of 30 seconds!

If you want to make more than one cupcake, multiply the ingredients by the number of cakes you want to make, and instead of an egg yolk in each, add one whole egg for every 2 cakes. Fill each cup to about half way and microwave in pairs for 30 seconds at a time until cooked through. Now you can enjoy a speedy cake whenever you like! 🙂
