Last week me & mum were on our way home from a day out and she mentioned that she quite fancied having afternoon tea but was too tired to go anywhere else to get food, so we headed home and I went straight to the kitchen. Within less than 20 minutes I’d rustled up these easy cheesy scones and they were on a plate in front of her, steaming hot and fresh out of the oven. Which we all know is the best way to eat cheese scones!
Here’s the recipe: Mix 8oz/225g of self-raising flour with 2oz/55g butter and a pinch of salt. Add in 1oz/25g grated mature cheese and then add 150ml/5fl oz of milk to bring the dry ingredients together to form a soft dough. Put dough onto a floured surface and pat down until it’s around 2cm thick and use a 2 inch biscuit cutter (or use a glass!) to cut out rounds and place onto a greased baking tray. Brush the tops of the scones with a little milk and add extra grated cheese to melt on top. Bake for 12-15 minutes until risen and golden.
