Seeing as the tennis at Wimbledon is in full swing and I’ve been seeing spectators scoffing strawberries all week, I thought I’d share with you a recipe for Eton mess, which I’m renaming in honour of the tournament.
The classic Eton mess is just a combo of whipped cream, strawberries and meringue, so here’s a recipe for making your own meringues at home:
Beat 4 egg whites with a handblender until it reaches the stiff peaks stage, then beat in 115g of caster sugar, one spoonful at a time. Sift 115g of icing sugar into the bowl and fold in with a metal spoon then drop dollops of the mixture onto a baking tray lined with greaseproof paper. Bake in the oven for 1 1⁄2-1 3⁄4 hours in the oven at 100C, then leave to cool before crumbling into the whipped cream and mix in sliced strawberries.
You can add a little strawberry sauce when you’re constructing the mess, and if the weather is nice as you’re watching Wimbledon and you fancy adding a little ice cream to your Wimbledon mess – go for it! Maybe strawberry ice cream would be nice?! Let me know how you get on 🙂
